Merinate :

  • 500g chicken, cut into pieces
  • 1 cup yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste

Biryani rice :

  • 2 cups basmati rice, soaked
  • 4 cups water
  • 1 bay leaf
  • 4-5 green cardamom pods
  • 4-5 cloves
  • 1 cinnamon stick
  • Salt to taste

Biryani masala :

  • 2 large onions, thinly sliced
  • 2 tomatoes, chopped
  • 1/2 cup mint leaves, chopped
  • 1/2 cup coriander leaves, chopped
  • 1/2 cup fried onions (for garnish)
  • 1/2 cup ghee or oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon biryani masala
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon saffron strands (soaked in warm milk)

Instructions:

1: Marinate the Chicken

  1. In a bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt.
  2. Marinate the chicken pieces in this mixture and refrigerate for at least 2 hours.

2: Prepare biryani rice

  1. Rinse and soak basmati rice for 30 minutes.
